How to fillet a pollack

Rob Phillips of Pengelly's Famous Fishmongers of Looe shows how to fillet some lovely Cornish pollack.  Pollack is a great sustainable alternative to cod and is landed to all the ports of Cornwall. It can be caught in nets, trawls and using hook and line, but line caught is definately the most sustainable method and the fish are premium quality as they have been taken straight out of the sea and put into ice.
